Pumpkin Bread
3 1/2 c all purpose flour
2 t baking soda
1 t salt
1/2 t baking powder
3 c sugar
1 t cinnamon
1 t pumpkin pie spice (I substitute 1/2 t cloves and 1/2 t nutmeg as, you guessed it, they don't carry pumpkin pie spice in Edinburgh!)
1/2 c vegetable oil
4 eggs
2 1/2 c tinned pumpkin
1/4 c water
Preheat oven to 350 degrees Fahrenheit. In a large bowl, combine dry ingredients. In a separate bowl, mix by hand the oil, eggs, pumpkin, and water. Combine all ingredients. Bake in 2 regular sized loaf pans for one hour or in 8 little loaf pans for 50 minutes.
